Thank you — your request has been sent, we will reply shortly.
From 100% Iberico pigs raised free-range on the Blázquez family dehesas in Extremadura, Andalucía and Salamanca. During the Montanera, from autumn to winter, they feed on the acorns of cork and holm oaks.
Each piece is salted under controlled conditions, then slowly cured, first in rooms, then in a natural drying shed in Guijuelo, the cradle of Iberico ham.
Tasting: ruby-red meat, finely marbled with infiltrated fat; aromas of hazelnut, acorn and toasted dried fruit, with a hint of undergrowth; melt-in-the-mouth texture and a long finish.
The shoulder: slimmer and narrower than the ham, it offers deliciously marbled meat and a powerful flavour, with a shorter cure. An ideal choice for a tapas menu.
Serving: at room temperature, sliced very thinly by knife.
Our Iberico shoulders are sold by the piece, at the actual weight of the piece received — the final price is confirmed upon weighing, at the time of order.
Price: on request, contact us for a current per-kg rate.
